How to Cook For the Perfect Cinco de Mayo Get Together

With Cinco de Mayo so close, now is the perfect time to bust out some new recetas de comidas, have a few friends over, and eat, drink, and be merry. Here’s what you should do to celebrate this most auspicious of holidays.

Get the Ingredients.

To celebrate Cinco de Mayo, why not make some Mexican sangria and ceviche? All you need for the sangria is two bottles of red wine, two cups of brandy, one cup of fresh orange juice, one lemon, one lime, an apple, a pear, and some ice. All you need for the ceviche is a pound of fish (halibut works pretty nicely), six more limes, a cup of diced fresh tomato, one green pepper, four tablespoons of chopped parsley, a quarter-teaspoon of salt, a quarter-teaspoon of pepper, half a teaspoon of oregano, two chopped jalapenos, two tablespoons of white vinegar, a medium onion finely chopped, two tablespoons of chopped cilantro, and a dash of Tabasco.

Let Things Marinate for a Bit.

First things first, you’re going to want to combine the wine, brandy, juice, and chopped fruit for the sangria in a large pitcher. Cover it, and let it chill for an hour or so. Once that’s in the fridge, dice up your fish, and juice your limes. Combine the two in a serving pan, and let the fish marinate for between to 10 to 20 minutes. The fish will be done once it’s an opaque color.

Put It All Together and Serve.

Once the fruit has soaked up some of the alcohol, and the fish has “cooked” in the lime juice, it’s all ready. Take the alcohol and fruit, and add the soda to serve. Take the ceviche, and pour out the lime juice marinade. Throw in the other ingredients, and toss to mix it up. And there you are.
